Which New Sous Vide Gadget To Buy

July 24th - via: popsci.com
We are creeping closer to the inevitable time when sous vide will be a mainstream technique in home kitchens. Sous vide, for those who need a refresher, is the increasingly popular method of cooking food enclosed in a plastic bag for a long time in a water bath at a precise temperature. Vacuum-sealing the bag is optional, but gives the technique its popular name (sous vide is French for "under vacuum"). The precise cooking produces unprecedentedly tender and flavorful meats, like a perfectly medium-rare steak or soft poached egg, with no risk of over- or undercooking. (Read More)

The Codlo: Like a Nest Thermostat for Sous-Vide Cooking

July 17th - via: core77.com
Sous-vide, or "under vacuum," is a cooking method whereby food is sealed in an airtight bag. The bag is then submersed in water and slow-cooked, and this vacuum system ensures the food is cooked evenly, both inside and out. As you can imagine, it requires a fair degree of precision to get it right, which in turn requires buying a pricey appliance with the requisite built-in precision. (Read More)

Look out Nomiku. Here Comes Codlo

July 2nd - via: makezine.com
I’ve been tracking the progress of Nomiku, a consumer class immersion circulator that was the highest grossing food project on Kickstarter and a Haxlr8r success story. The product aims to bring to fancy restaurant technology into the home kitchen with a device that clips onto a pot of water to heat it to precise temperatures, allowing you to cook meat sous vide. The technique of slow cooking meat in a vacuum sealed bag is de rigueur at high-end restaurants, but out of reach for home users because of the price. While it hasn’t started shipping yet, Nomiku will retail for $359 and the creators call it the first immersion circulator for the home cook. (Read More)

Cool Product: Plugin Sous Vide Device for Home Kitchens

July 1st - via: foodista.com
Sous vide (cooking under vacuum) is a hot new trend, but most equipment available are expensive, commercial-grade machines. Codlo is a new device that lets you sous vide in your own kitchen using your rice or slow cooker. Just plug the powerful, compact controller in and you're off to cooking healthy, gourmet meals at home. (Read More)

Codlo: an elegant sous-vide machine for a more civilised age

July 1st - via: sciencefare.org
Being a food geek can be pretty difficult when you’re from the UK. Too many recipes use unnecessary volumetric measurements, modernist ingredients here cost an arm and a leg, and we have no way to buy cheap electronics off Amazon. That last problem can be somewhat annoying when you’re trying to hack together a sous vide device and immerse yourself (pun intended) in precise-temperature cooking. (Read More)

Codlo launched on Kickstarter earlier today, and aims to make sous vide simple and cheap. You plug the cooker into Codlo, put a probe in the water and you’re done. (Read More)

Codlo Sous Vide Controller Kickstarter

June 28th - via: cookingforengineers.com
One of the founders of Codlo contacted me last week to tell me about the water bath temperature controller that they've designed and are planning to build with the assistance of Kickstarter (the online crowd funding website). I've used a variety of methods to control temperature in a water bath for sous vide cooking and one of my favorites is simple: plug in a PID controller equipped with a thermocouple to the wall and plug in a device like a rice cooker filled with water into the controller. (Read More)

Codlo: Sous Vide Cooking With Ease

June 28th - via: geekdad.com
A couple years ago I was looking for a way to cook a whole lot of steaks at once when my family came to visit—I only had a small charcoal grill and wasn’t ready to invest in something larger at the time. I got plenty of suggestions from Twitter: sear them on the grill and finish in the oven, buy a bigger grill, and — probably the funniest — make a grill out of my bathtub. At least, I assume that was a joke. (Read More)
