If at first you don’t succeed, launch another Kickstarter.

Prairie Dogs Hot Dogs and Handcrafted Sausage has been holding pop-up dinners around town for quite a while now and launched their first online fundraising campaign to open a space of their own in the spring.

Owners Craig Johnson and Tobie Nidetz raised less than $4,000 of the $30,000 they sought.

This time, they say they have a space near Lake Street and Lyndale Avenue in Minneapolis and will open either way, but can get it done faster with the public’s help.

On the new Kickstarter page, Johnson and Nidetz explain their second try:

“We were a little too early in our saga and we were asking too much from strangers who really didn’t know us. We feel the time is right now. We’ve got the right place and a great group of hot dog and sausage fanatics to help us spread the word. It’s up to you.”

Besides handmade hot dogs (topped with artisan ingredients), the restaurant will have house-made sodas and shakes, local craft beer and affordable wines, the duo promises.

Rewards include free meals at the restaurant, swag and sausage-making lessons from Johnson.
